Ingredients
1 Jade Perch fillet
Salt and pepper for seasoning
All purpose plain flour or rice flour
Oil
1 clove of garlic, crushed
A dollop of butter
Choice of salad
How To Cook
- Season both sides of fillet with salt
- Dust fillet with all-purpose plain flour or rice flour
- Add oil to a pan and bring it to high heat
- Place fish skin side down into the hot pan. Use a frying spatula to prevent the fish from curling up and ensure the entire skin of fish comes into contact with the pan.
- Pan-fry the fish for 3.5 minutes skin side down and 1-minute skin side up. Adjust the timing accordingly depending on the size and thickness of the fillet.
- Add some butter and a crushed garlic clove before basting the fish to a beautiful golden brown.
- Remove fish from heat and add salt and pepper to taste.
- Pair the fish with your favourite salad and Bon Appetit!
